The Incomparable Carbonara

A quick and easy classic of Italian cuisine!


1 lb
Spaghetti (Any pasta will do)
4 oz
Pancetta (Sliced 1/4" thick, cut into strips 1" long and 1/8" thick)


Start a pot of water heating for the spathetti, and while that's coming to a boil, Cut pancetta into matchstick strips - cook quickly over high heat and remove to a warm plat - think good crisp bacon.. Cook the spaghetti al dente per package directions, drain and place in large serving dish Drizzle with good olive oil Crack eggs into a cup, stir with fork, breaking yolks and blending yolks and whites To the spaghetti, add the panchetta, then the yolks and toss with salad tongs - the hot spaghetti should cook the eggs and lightly coat the pasta Season with cracked pepper and pinch of salt Serve immediately This is just a first try at posting a recipe - we're trying things out here!
